Recipe-Coconut Pudding

Like every Thursday here's a new recipe, this time it's from Ana, she's Spanish and corrects my spanish blog.

Coconut Pudding
This dessert is easy and quick to prepare. And the best part is , the result is delicious.

_2 cans of evaporated milk
_2 cans of condensed milk
_6 eggs
_3 tablespoons of shredded coconut (separate the amount that will be used to decorate the pudding along with strawberries and whipped cream).
_3 tablespoons of sugar (to caramelize the pan)

How to prepare:
In a plastic container place the evaporated milk, condensed milk and eggs, mixing it well with the help of an electric mixer. The coconut is added at the endbut without stirring it .
Then place the mix in a metal mold previously caramelized. To make the caramel, put the sugar in a saucepan and heat to simmer until it comes undone and it is liquid. When the color of caramel is golden brown quickly pour over the mold, because if and when the caramel cools it hardens quickly, making it hard to manage. The place the pan in an oven that is preheated to 350 ° F, so that it can cook in a water bath for 50 minutes. Let it cool inside the oven, and it is important not to take the pudding out of the mold until it is very cold. Finally, decorate it as desired.
