Recipe: Light Coconut Flan

Ingredients:

1 envelope of powdered milk

1 can of coconut milk

1 can of milk

2 tablespoons of sweetener

2 envelops of colorless gelatin

Preparation:

First melt the gelatin with two fingers of water until dissolved and then set aside.

Place the remaining ingredients in a blender and blend for several minutes.

As the blender is still turned on add the gelatin that was put aside and continue to blend all the ingredients together.

Place in a Pyrex dish and refrigerate for three hours before removing from pan.

Decorate with prunes.

Optional:

In a small saucepan put some pitted prunes with a little water and cook until smooth, beat in blender until creamy and put in the pudding to decorate.
